A. there are only 2 hotels at the playa Jibacoa I don't remember what the other one is but is looks like is sucks big time the other one is the Breezes Jibacoa a 4 star adult only resort. You can book it through travellastminute.ca or Sunwing or any of the other tour operators.
Select for Varadero and then select Breezes Jibacoa from the pull down menus, the planes for this resort generally land in Varadero. BTW if you haven't been there before it is a way out in the country away from everything it takes about 30 to 45 minutes to get there from the airport. A nice relaxing resort
